Turmeric Chickpea and Quinoa Patties

These patties are quick and super easy to make. Turmeric is an amazing natural anti inflammatory and they are high in protein because of the quinoa and the chickpeas and most importantly are very delicious!


Ingredients: 

- 1 small jar of cooked chickpeas (approx. 200g)
- 1/3 cup of uncooked quinoa
- 1 small red onion, diced
- 1 tsp ground turmeric
- Cracked black pepper (which helps your body better absorb the turmeric) 
- 1/2 tsp onion powder
- 1 tsp garlic salt
- 1/3 cup oats

*Disclaimer: When I made this recipe I eyeballed the ingredients so this is an approximation and not exact. If the patties turn out a little too wet add more oats, add other spices to taste, make them your own! 

Directions:

First you'll want to put on the quinoa to cook, *rule of thumb is roughly 3:1 ratio of water/stock to quinoa, so 1/3 cup of quinoa to 1 full cup of water* let simmer until all the water/stock has absorbed  (if it still isn't fully cooked add in a little bit more water and let simmer again until the quinoa is cooked properly)
Next preheat the oven to 180 degrees celsius.
Then you'll need to drain and rinse your chickpeas thoroughly and then pop them into a large mixing bowl and mash them up. 
Add the red onion, oats and spices and mix up till combined. 
Once the quinoa is cooked and has absorbed all the water, add it to the large mixing bowl and mix again till the mixture is combined. 
Form into little patties by using your hands and pop onto a lined baking tray and place in the oven roughly 10-15 minutes either side!
I served these with some raw veggies like cucumber and tomato and some salad but you could serve them in a bun with chips or with salad and chips. 

And that's it, as easy as that!
